I’m just going to say it… this Apple Fritter Bread is damn delicious. For being homemade from scratch, it’s rather easy to make; almost all in one bowl, and takes under an hour from start to finish. Making it a perfect option for just about any morning. The best part? It tastes JUST LIKE an apple fritter, but without all the frying involved.
With nice chunks of apples, plenty of spice, and a simple sweet frosting drizzle on top, this bread won’t last long! It’s also a great vegetarian breakfast option.
I opted to use two green apples and one red apple, but you could use whichever apples you enjoy the most. I liked the green ones in there because their tartness really cut the sweetness of the frosting drizzle, but a pink lady or gala apple would be good choices too.
I also left the skins on my apples to give a variance in texture among the bread. Another way to do that would be by adding in some chopped nuts.
Apple Fritter Bread
Ingredients
- 2 Medium Red Apples, Chopped
- 1/2 C. Brown Sugar Substitute
- 2 Tsp. Ground Cinnamon
- 1 Tsp. Ground Ginger
- 1 Whole Large Egg
- 1/3 C. Sugar
- 1/4 C. Vegetable or Canola Oil
- 1/4 C. Low Fat Sour Cream
- 2 Tsp. Vanilla Extract
- 1 C. All-Purpose Flour
- 1 Tsp. Baking Soda
- 1/2 Tsp Salt
- 1/2 C. Powdered Sugar Substitute
- 1/2 Tsp. Vanilla Extract
- 1-2 Tbsp. Fat Free Milk
Instructions
- Preheat the oven to 350 degrees F. and lightly coat a loaf pan with non-stick baking spray; set aside.
- In a medium mixing bowl, stir together the 2 Medium Red Apples, 1/2 C. Brown Sugar Substitute, 2 Tsp. Ground Cinnamon, and 1 Tsp. Ground Ginger until the apples are coated evenly.
- In a large mixing bowl, whisk together the 1 Whole Large Egg, 1/3 C. Sugar, 1/4 C. Vegetable or Canola Oil, 1/4 C. Low Fat Sour Cream, and 2 Tsp. Vanilla Extract.
- In another bowl, mix together the 1 C. All-Purpose Flour, 1 Tsp. Baking Soda, and 1/2 Tsp Salt until well combined.
- Stir the dry ingredients into the wet until just combined.
- Fold in 2/3 of the cinnamon sugar apples.
- Transfer the batter into the prepared loaf pan.
- Top with the remaining 1/3 of the apples and place in the oven to bake for 50-55 minutes.
- Once done, remove from the oven and allow to cool for 30 minutes to 1 hour.
- When the bread is cooled, if using the optional drizzle, you can whisk together the 1/2 C. Powdered Sugar Substitute, 1/2 Tsp. Vanilla Extract, and 1-2 Tbsp. Fat Free Milk and drizzle over the top of the bread before slicing and serving.
