A tasty Lebanon dish that's made with roasted eggplant, spices, lemon, and tahini. Perfect as a snack or appetizer to serve with pita or naan!

Ingredients

  • 1 Large Eggplant
  • 1/4 C. Fresh Parsley
  • 1/4 C. Tahini
  • 1/2 Lemon, Juiced
  • 1 Clove Garlic
  • 1 Tsp. Salt
  • 1 Tsp. Extra Virgin Olive Oil
  • 1 Tsp. Vinegar
  • 1/2 Tsp. Ground Cumin

Instructions

  1. Preheat the oven to 400 degrees F. and line a baking sheet with foil or a silicone baking mat.
  2. Pierce the eggplant a few times and set it on the baking sheet. Place in the oven to bake for 40-50 minutes or until tender.
  3. Allow it to cool slightly, enough to handle, and remove the skin. Place the 'meat' of the eggplant into a strainer to remove some of liquid.
  4. Place the eggplant into a blender or food processor along with 1/4 C. Fresh Parsley, 1/4 C. Tahini, 1/2 Lemon, 1 Clove Garlic, 1 Tsp. Salt, 1 Tsp. Extra Virgin Olive Oil, 1 Tsp. Vinegar, 1/2 Tsp. Ground Cumin. Blend until smooth.
  5. Once done, transfer to a serving bowl and top with more olive oil or Za'atar if desired to enjoy right away or cover and chill in the fridge.
