BBQ Pork Tenderloin Sliders (Instant Pot) & Quick Pickled Red Onions

It's the last week of school here for my little one and I am SO ready for summer, just like I know the rest of you are. I am ready to sleep in a bit in the mornings and take things slow for a little while. This end-of-the-year rush is no joke. My kid is exhausted. I'm exhausted. We're all exhausted. And that's why I'm sticking to quick and easy dinners right now.

These BBQ Pork Tenderloin Sliders are made in just at 30 minutes with the help of my electric pressure cooker and the quick pickled red onions on top are even easier! See? There is hope after all during this end of the year crunch time!

Loaded Wedge Salad BBQ Pork Tenderloin Sliders

This pork tenderloin is cooked up quickly in a pressure cooker and infused with delicious BBQ flavor. Pile it high on a slider with homemade quick picked red onions!

Prep Time: 5 Minutes • Cook time: 30 Minutes

The Skinny:
Servings: 10 • Serving Size: 1 Prepared Slider • Calories: 285 • Fat: 5 g • Saturated Fat: 1 g • Carb: 34 g • Fiber: 1 g • Protein: 23 g • Sugar: 3 g • Sodium: 658 mg

Ingredients:
Tenderloin:
• 2 Lb. Smithfield All Natural Boneless Loin Filet
• 1 Tbsp. Salt-Free BBQ Seasoning
• 1 C. (About 1/2 Bottle) BBQ Sauce of Choice
• 1 C. Water

Quick Pickled Red Onions:
• 1/2 Red Onion, Sliced Thin
• 1 C. Apple Cider Vinegar
• 1 Tsp. Sugar
• 1 Tsp. Salt

Sliders:
• 10 Whole Wheat Slider Buns
• 20 Slices of Dill Pickle
• Extra BBQ Sauce to Drizzle, Optional

Directions:
Rub the 2 Lb. of pork down with the 1 Tbsp. of seasoning.

Place the 1 C. of BBQ sauce and 1 C. of water in the base of the pressure cooker and whisk together.

Add the spice rubbed tenderloin into the sauce and secure the lid.

Set the steam valve to 'sealed' and cook on manual for 30 minutes.

While the tenderloin is cooking, set a medium pot of water to boil and place the 1/2 of a sliced red onion into a colander.

In a medium bowl, whisk together the 1 C. apple cider vinegar, 1 tsp. sugar, and 1 tsp. salt together until the salt and sugar have completely dissolved.

When the water is hot and boiling, pour it out over the colander of red onion over the sink to blanch them.

Toss the onions into the vinegar mixture and allow to sit in; stirring on occasion.

Once the pork is done, quick release the pressure valve and remove the pork to a cutting board to slice into about 10 pieces.

Place one slice of pork onto a slider bun and top with a few pickled onions, 2 slices of pickle and a drizzle more of BBQ sauce if desired.

Enjoy right away!
