Chocolate Crinkle Cookies
Ingredients
- 1 C. Flour
- 1 Tsp. Baking Powder
- 1/2 Tsp. Salt
- 1/2 C. Sugar
- 1/2 C. Natural Sweetener
- 1/3 C. Canola or Vegetable Oil
- 2/3 C. Unsweetened Cocoa Powder
- 2 Whole Large Eggs, Room Temperature
- 1 Tsp. Vanilla Extract
- 1/4 C. Powdered Sugar
- 1/4 C. Powdered Sugar Substitute
Instructions
- Whisk together the 1 C. Flour, 1 Tsp. Baking Powder, and 1/2 Tsp. Salt together in a medium bowl; set aside.
- Place the 1/2 C. Natural Sweetener and 1/3 C. Canola or Vegetable Oil into the base of a stand mixer fitted with the whisk attachment. Beat together until well mixed.
- Add in the 2/3 C. Unsweetened Cocoa Powder and continue to beat until well combined.
- Beat in the 2 Whole Large Eggs one at a time and the 1 Tsp. Vanilla Extract.
- Stir the flour mixture into the chocolate mixture in two or three batches until just combined.
- Cover with plastic wrap or place in an air-tight container and place into the fridge for at least four hours and up to overnight.
- Preheat the oven to 350 degrees F. and line a baking sheet with a silicone mat; set aside.
- Place the powdered sugar and powdered sugar substitute into a small bowl.
- Scoop the dough out in 1 1/2 Tbsp. size balls. Roll each in the powdered sugar mixture and place onto the prepared baking sheet about 2" apart.
- Bake for 10-12 minutes. Remove from the oven once done and let the cookies sit for 2-3 minutes before transferring to a wire rack to continue cooling.
