It’s going to be a busy day as I prepare for the possible in climate weather that is supposed to be sliding in this evening. So, I went out on my walk and then came in and made myself this Inside-Out Truffalo Breakfast Burrito. I’ve made an inside-out burrito before, but it wasn’t quite like this. What’s truffalo? It’s a delightful mix of truffle and spicy buffalo flavors!
The first time I heard about truffalo was at a chicken wing joint and after that I set out on a mission to find a sauce that was similar - tada! I found it. It’s pretty good too. I took this breakfast burrito a step further though and included a spicy buffalo seasoning AND truffle salt.
The end result is this cheesy, bacon, truffle, buffalo sauce goodness that was really what I needed to kick off my day. If you aren’t a fan of buffalo or truffle, well then this probably isn’t the breakfast for you. This inside out burrito comes NAKED and with no tortilla. The egg acts as the wrap to hold everything together which means you get to forgo a tortilla all together.
Part omelette. Part burrito. Perfect!

Inside-Out Truffalo Breakfast Burrito
Ingredients
- 2 Whole Large Eggs
- 2 Tbsp. Fat Free Cottage Cheese
- 1 Oz. Deli Sliced Turkey
- 2 Slices Cooked Low Sodium Center Cut Bacon
- 1 Slice of American Cheese
- 1/8 Tsp. Truffle Salt
- 1/4 Tsp. Buffalo Seasoning
- 1 1/2 Tsp. Truffalo Sauce (Buffalo + Truffle)
- 1 1/2 Tsp. Light Ranch Dressing
- 1 Sliced Green Onion
Instructions
- Place a small skillet over medium heat.
- Blend together the 2 whole large eggs and 2 Tbsp. cottage cheese with just a pinch of the buffalo seasoning.
- Once the pan is hot, lightly coat it with non-stick spray and pour the egg mixture in.
- Cover with a lid and cook until the egg is set.
- Using a spatula, carefully flip the egg over and remove from the heat.
- Top the egg with the 1 Oz. turkey, 2 slices of cooked bacon, a slice of American cheese, the truffle salt, the rest of the buffalo seasoning, and a bit of the truffalo sauce.
- Roll the burrito up and plate.
- Drizzle with the remaining truffalo sauce and ranch; sprinkle with the green onions and enjoy right away!
