Valentine’s day is coming and that always puts me in the mood for sweets. Being as my daughter is pretty much in love with waffles, I decided to try my hand at making some pink velvet waffles! What are pink velvet waffles? Well, they’re basically a pink version of red velvet that’s made with just a touch of cocoa powder and lighter colors to be pink rather than full on red!
Being as they are pink velvet waffles, I opted to make a cream cheese drizzle in place of syrup to go along with these sweeties. And of course, no waffle can go eaten in this house unless it has sprinkles on top. So, these pretty pink sprinkles were the perfect addition.
Now, my waffle maker is a boy boy and it makes big giant Belgian style waffles that I can honestly say half of a waffle is pretty much a serving. Seriously. Each waffle uses a FULL CUP of batter to make. I always find it easier when playing with colors and what not to go with a boxed mix so that I don’t have to worry about the stability of the batter.
So here we go! These pretty in pink waffles are the perfect thing to wake up to on the big day of love!

Pink Velvet Waffles & Cream Cheese Drizzle
Ingredients
- 3 Oz. Neufchatel (1/3 Less Fat) Cream Cheese, Room Temperature
- 3 Tbsp. Butter, Room Temperature
- 1 C. stevia
- 1/4 C. Unsweetened Almond Milk
- 1/4 Tsp. Vanilla Extract
- 3 C. Belgian Waffle Mix
- 1 1/3 C. Water
- 2 Eggs
- 1/3 C. Oil
- 1 Tbsp. Unsweetened Cocoa Powder
- Pink Food Coloring
Instructions
- Place the 3 Oz. Neufchatel (1/3 Less Fat) Cream Cheese and 3 Tbsp. Butter in the bowl of a stand mixer (or beat by hand) until fluffy.
- Add in the 1 C. Powdered Sweetener Sugar, 1/4 C. Unsweetened Almond Milk, and 1/4 Tsp. Vanilla Extract; beat on a low speed until the sweetener is well incorporated, then increase the speed and whip until smooth and creamy; set aside.
- Preheat the waffle iron.
- Whisk together the 3 C. Belgian Waffle Mix, 1 1/3 C. Water, 2 Eggs, 1/3 C. Oil, 1 Tbsp. Unsweetened Cocoa Powder, and pink food coloring.
- Set aside for 2 minutes.
- Once the waffle iron is preheated, scoop out the allotted amount of batter onto the waffle iron according to your waffle irons instruction manual. (Mine is 1 full cup of batter.)
- Close and cook. (Mine took 3 minutes.)
- Once done, remove the waffle from the waffle iron and drizzle with the cream cheese mixture. Top with sprinkles if desired and enjoy!
