Lean Mean Green Power Sandwich

After a bit of a whirl wind trip to Dallas and back to Austin. And currently with a house full of two very energetic 7 year olds, momma needs some greens. How else am I going to keep up with my daughter and my nephew? With the influx of summer heat and all the madness and chaos around me right now, I figured there was no better time than now for this cool crisp veggie loaded green sandwich!

Of course, this isn't the most 'kid friendly' sandwich; unless you lucked out and have the least picky eater on the planet. So this is for the mommas, the papas, and any other parental/guardian unit that's in need of a way to power through the rest of the day. The kiddos around here opted for turkey and cheese. But, me? I'm strong, happy, and ready to go with this bad boy right here.

I started this sandwich out with a white whole wheat bread. Why? Because like I said, I have a house of kids right now and anything other than white bread is a no-go. A nice white whole wheat is the next best option though. A little compromise between both ends of the spectrum. To that, I added some chive and onion cream cheese on one slice of the bread, followed by some slightly mashed avocado on the other slice. In between, I piled it up with broccoli sprouts, baby kale, spinach, and even some slices of nice zucchini!

Green on top of green on top of even more green I tell you. And what's more glorious than that? Not a whole lot, if you ask me. This sandwich was hearty enough to fill me up and keep me satisfied for the rest of the evening, Yes, we had sandwiches for dinner. There's no shame in my game and there's nothing wrong with sandwiches for dinner. Especially when it's so hot outside.

If I were any weaker of a woman, I would have put a fried or hard-boiled egg in there somewhere, but I didn't today. Not for any other reason than I really just didn't feel like turning the stove on to heat up the house today. Summer time in Texas, people... It's a killer, I tell you. That's just another thing that I love about this sandwich. It's summer friendly! I.E. I don't have to use any sort of heat to eat.

I served my sandwich here with a deli style pickle and a few kettle cooked chips. Because, what goes better with a nice cold sandwich than some crunchy chips? It's only natural.

The Skinny:
Servings: 1 • Size: 1 Prepared Sandwich • Calories: 334.1 • Fat: 22.8 g • Saturated Fat: 6.8 • Carb: 30.3 g • Fiber: 12 g • Protein: 10.5 g • Sugar: 4 g • Sodium: 430.6 mg

Ingredients:
2 Slices Good Bread (Mine was 70 calories for 2 slices.)
1/2 C. Broccoli Sprouts
1 C. Baby Kale & Spinach Mix
1/4 C. Mashed Avocado
1/4 C. Sliced Zucchini
2 Tbsp. Chive & Onion Cream Cheese

Directions:

Build up your sandwich by putting the 1/4 C. Mashed Avocado on one side and the 1 Tbsp. Chive & Onion Cream Cheese on the other slice.

Pile on the 1/2 C. Broccoli Sprouts and 1/4 C. Sliced Zucchini, followed by the 1/2 C. Baby Kale & Spinach Mix

Close up your sandwich, slice it in half and enjoy!
