Warm oats, lovingly blended with real maple syrup and crunchy pecans, then baked to golden perfection for that delightful maple cream top.

Ingredients

Maple Pecan Oats
  • 1 C. Dry Uncooked Quick Oats
  • 1 Whole Banana
  • 1/2 C. Unsweetened Almond Milk
  • 1 Tsp. Baking Soda
  • 1 Tsp. Vanilla
  • 1/8 Tsp. Salt
  • 2 Tbsp. Chopped Pecans
  • Optional: 2 Tbsp. White Chocolate Chips
Maple Cream Sauce
  • 2 Oz. Fat Free Cream Cheese, Room Temperature
  • 1 1/2 Tbsp. Maple Syrup
  • 1 1/2 Tbsp. Brown Sugar Blend
  • 1 Tbsp. Butter, Room Temperature

Instructions

  1. Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekin dishes with non-stick baking spray; set aside.
  2. Blend together the 1 C. Dry Uncooked Quick Oats, 1 Whole Banana, 1/2 C. Unsweetened Almond Milk, 1 Tsp. Baking Soda, 1 Tsp. Vanilla, and 1/8 Tsp. Salt in a blender, food processor, or in a cup with an immersion blender.
  3. Divide the mixture evenly between the ramekins and top each with 1 Tbsp. Chopped Pecans and 2 Tbsp. White Chocolate Chips if desired.
  4. Place them in the oven to bake for 25-30 minutes.
  5. While the oats are baking, stir or blend together the 2 Oz. Fat Free Cream Cheese, 1 1/2 Tbsp. Maple Syrup, 1 1/2 Tbsp. Brown Sugar Blend, and 1 Tbsp. Butter.
  6. Once the oats are done, remove them from the oven and top with the cream cheese sauce divided evenly to enjoy right away or store in the fridge for 3-5 days to reheat and enjoy later!
