Healthy hasn’t tasted this cozy—so grab that fork and warm up your table with this guilt-free seasonal treat!

I served mine this time with some grilled tenderloin steak and called it a meal, but this would be a great side to any dinner or even served as the main part of the meal with a simple salad on the side. Add the bacon and blue cheese crumbles if you’d like to enjoy it just as is! Either way you decide to go, you’re sure to love this guild-free delight!

Maple Pecan Roasted Acorn Squash

This delightful dish features sweet, caramelized acorn squash paired with the rich crunch of toasted pecans, all drizzled with pure maple syrup for a touch of natural sweetness.

Ingredients

  • 1 Acorn Squash
  • 1 Tbsp. Butter
  • 2 Tbsp. Maple Bourbon Syrup
  • 2 Tbsp. Chopped Pecans
  • Optional Toppings: Bacon or Bleu Cheese Crumbles

Instructions

  1. Preheat the oven to 425 degrees F. and cover a baking sheet with foil or a silicone baking mat.
  2. Cut the acorn squash in half and remove the seeds and pulp. Season with salt & pepper.
  3. Divide the 1 Tbsp. Butter and 2 Tbsp. Maple Bourbon Syrup between the squash halves.
  4. Place them into the oven and bake for 40 minutes.
  5. Remove and baste the squash with the buttery mixture every 10 minutes.
  6. Once done, remove from the oven and top with 2 Tbsp. Chopped Pecans, and any additional toppings desired.
  7. Serve right away to enjoy!
