I used this dressing with a simple fall inspired salad with a base of baby spinach that’s topped with roasted butternut squash, dried cranberries, pecans, and goat cheese. It was a super easy dish that is great as a lunch or even a side salad as part of a dinner.
Pumpkin Maple Salad Dressing
Ingredients
- 1/2 C. Pumpkin Puree
- 1/4 C. Apple Cider Vinegar
- 1 Tbsp. Fresh Thyme, Rosemary or Sage
- 2 Tbsp. Maple Syrup
- 1/2 Tsp. Dijon
- 1/4 Tsp. Pumpkin Pie Spice
- 1 Garlic Clove
- Pinch Crushed Red Pepper Flakes
- Salt & Pepper to Taste
- 1/2 C. Olive Oil
Instructions
- Place the 1/2 C. Pumpkin Puree, 1/4 C. Apple Cider Vinegar, 1 Tbsp. Fresh Thyme, Rosemary or Sage, 2 Tbsp. Maple Syrup, 1/2 Tsp. Dijon, 1/4 Tsp. Pumpkin Pie Spice, 1 Garlic Clove, Pinch Crushed Red Pepper Flakes, and Salt & Pepper to Taste into a blender, food processor, or cup for an immersion blender.
- Puree until smooth.
- Add in the 1/2 C. Olive Oil and blend once again.
- Once done, use right away or cover and store in the fridge until ready to enjoy or up to 3-5 days.
