Maroulosalata Salad
Ingredients
- 4 C. Chopped Romaine
- 4 C. Chopped Radicchio
- 1/2 Bunch of Fresh Dill, Chopped
- 1 Green Onions, Diced
- 1/2 C. Toasted Pine Nuts
- 1/4 C. Extra Virgin Olive Oil
- 1/4 - 1/3 C. Water
- 7 Oz. Fat Free Feta Cheese
- 2 Garlic Cloves
- 1 Lemon, Juiced
- Salt & Pepper to Taste
Instructions
- In a blender, food processor, or the cup of an immersion blender, mix together the 1/4 C. Extra Virgin Olive Oil, 1/4 - 1/3 C. Water, 7 Oz. Fat Free Feta Cheese, 2 Garlic Cloves, 1 Lemon Juiced, and Salt & Pepper to Taste.
- Toss together 4 C. Chopped Romaine, 4 C. Chopped Radicchio, 1/2 Bunch of Fresh Dill, 1 Green Onions, Diced, and 1/2 C. Toasted Pine Nuts.
- Divide the salad evenly among bowls then top with the dressing to enjoy right away!
