Strawberry Pop-Tart Overnight Oats

Just a few more weeks and my kiddo will be out for summer. And these last few weeks are always super DUPER busy. In order to avoid skipping out on breakfast in the morning, I like to have a few things on hand that I can grab-and-go eat with no excuses and no guilt. That’s where these Strawberry Pop-Tart Overnight Oats come into play.

Overnight oats are tasty, easy to make, and an excellent thing to meal prep. The oats themselves are left overnight in a mixture of almond milk, greek yogurt, some sweetener, and real-deal cake batter flavor. They’re also stuffed full of strawberry goodness and then topped off with a drizzle of frosting and even rainbow sprinkles!

Of course, these oats are lightened up with the almond milk instead of regular. They’re also made with natural sweetener and fruit! The greek yogurt gives a little boost of protein and a tang. And yes, the frosting on top is pretty much required since that’s what helps give that pop tart taste and feel!

These are great for breakfast, lunch, or even dessert! It’s a fun and easy way to make sure you stay on track even on the busiest of days.

Strawberry Pop Tart Overnight Oats

Overnight oats that taste just like a strawberry pop-tart! Easy to make ahead for a meal prep breakfast that's also grab-and-go friendly!

Ingredients

Oats
  • 1 C. Dry Oats
  • 1 C. Unsweetened Almond Milk
  • 6 Oz. Plain Fat Free Greek Yogurt
  • 1/4 C. Freeze Dried Strawberries
  • 1 Tbsp. Natural Sweetener
  • 1 Tsp. Cake Batter or Vanilla Extract
  • 1/4 C. Strawberry Jam
  • Rainbow Sprinkles
Frosting
  • 1/4 C. Powdered Sugar Substitute
  • 1 Tsp. Unsweetened Almond Milk
  • 1/8 Tsp. Vanilla Extract

Instructions

Oats
  1. Stir together the 1 C. oats, 1 C. almond milk, 6 Oz. greek yogurt, and 1 Tsp. cake batter or vanilla extract.
  2. Divide about 3/4ths of the oat mixture evenly among containers.
  3. Set about 11 Tbsp. freeze dried strawberries along the middle of the oats, and top that with 1 Tbsp of the Strawberry Jam.
  4. Top each with the rest of the oat mixture evenly.
  5. Cover and place in the fridge overnight!
Frosting
  1. Right before you're about to enjoy, mix together the 1/4 C. powdered sugar, 1 Tsp. almond milk, and 1/8 Tsp. vanilla together.
  2. Drizzle the frosting over the top of the oats.
  3. Garnish with sprinkles if desired and enjoy!
