Lunch is served! This Thai Chicken Wrap is as simple as it comes. A simple lavash pita bread wrapping cabbage, carrot, peanuts, and chicken! There isn’t much here to lighten up since all of the ingredients are already fairly clean and simple. And this Thai Chicken Wrap must absolutely be served with a Thai Peanut Dressing for dipping.
The sauce is pretty much what makes this wrap ‘Thai chicken’. But, if you aren’t a fan of Thai peanut sauce then you are more than welcome to try any other number of dipping sauces that you enjoy instead. This wrap is super easy though and perfect PERFECT for meal prepping lunches for the week.
I made up a batch of these and we had them for dinner and also had enough leftover for a couple of us to have for lunch. I’ve left these as half of a wrap being a serving since the calories are minimal and half of one is pretty filling. Especially when paired with the sauce and a healthy side such as sugar snap peas or a mandarin orange.
The lavash bread that I used was 80 calories for the whole sheet (so 40 calories for half.) Which is a really good deal when it comes to bread replacements!

• 4 Lavash Pita Flat Bread Wraps
• 2 C. Cooked & Shredded Boneless Skinless Chicken Breast
• 3 C. Shredded Cabbage
• 1 C. Shredded or Chopped Carrot
• 1/3 C. Dry Roasted Peanuts, Chopped
• 1/4 C. Chopped Cilantro
Directions:
In a medium bowl, mix together the 3 C. cabbage, 1 C. carrot, 1/3 C. peanuts, and 1/4 C. cilantro.
Lay out the lavash pitas and scoop about 1 C. of the cabbage mix onto each.
Divide the chicken evenly among the 4 pitas.
Roll it all up together in the lavash and cut the pita in half.
Store in an air-tight container in the fridge or enjoy right away with a Thai peanut sauce for dipping!
