A simple and delicious classic. Fresh and light and full of flavor. Serve this up on lettuce leaves or as it is!

Ingredients

  • 1 Granny Smith Apple, Diced
  • 1 1/2 Tsp. Sugar
  • 1 Tsp. Lemon Juice
  • 1/2 C. Diced Celery
  • 1/2 C. Red Seedless Grapes, Halved
  • 1/4 C. Chopped Walnuts or Pecans
  • 1/4 C. Whipping Cream
  • 2 Tbsp. Light Mayonnaise
  • 1/2 Tsp. Salt

Instructions

  1. Place the 1 Granny Smith Apple, 1 1/2 Tsp. Sugar, and 1 Tsp. Lemon Juice into a large bowl and toss to coat.
  2. Add in the 1/2 C. Diced Celery 1/2 C. Red Seedless Grapes, and 1/4 C. Chopped Walnuts or Pecans.
  3. In another bowl, or the base of a stand mixer, whip the 1/4 C. Whipping Cream until stiff peaks form.
  4. Fold in the 2 Tbsp. Light Mayonnaise and 1/2 Tsp. Salt.
  5. Add the cream and mayo mixture to the fruit and veggies.
  6. Stir until just combined.
  7. Cover and chill in the fridge for one hour or overnight.
  8. Enjoy as it is or over lettuce.
